This Champagne mignonette was created with Laetitia Sparkling Brut Rosé by The Coastal Oyster Co. Laetitia is the premier Sparkling Wine house of California’s Central Coast, and their Sparkling Brut Rosé is an award-winning Bubbly they make in house, in the French Champagne style.

Laetitia’s story began in 1982, when André Allier-Duetz of Champagne Deutz recognized in this estate the same promise he knew from his native France. Inspired by the growing conditions, he established Maison Deutz on the property and installed two traditional Coquard presses—still in use today and the only ones of their kind in North America.

Sparkling Brut Rosé Pomegranate Mignonette

Coastal Oyster Co. crafted this recipe that pairs perfectly with Laetitia 2022 Sparkling Brut Rosé, but you can use any Champagne or Sparkling Wine in it. The Rosé color is perfect for Valentine's Day!

Servings 24 oysters or more

Ingredients
  

  • 1/2 cup 2022 Sparkling Brut Rosé
  • 2 Tbsp champagne vinegar or white wine vinegar
  • 2 tbsp fresh pomegranate juice
  • 1 1/2 tbsp finely diced shallot
  • 1 tbsp pomegranate arils lightly crushed to release juice
  • Pinch of white pepper
  • 1/2 tsp honey

Instructions
 

  • Let the 2022 Sparkling Brut Rosé go mostly flat (10–15 minutes).
  • Whisk together vinegar and pomegranate juice.
  • Stir in shallot, crushed arils, and pepper.
  • Add rosé, taste, and adjust acidity or sweetness
  • Chill at least 30 minutes before serving.
