Summer on the Central Coast means grilling in your own backyard! If you’re keeping it healthy, here are 2 main dishes for the grill that keep it lighter. So invite some friends over, fire up the grill and chill some drinks…it’s going to be a great weekend!

First up, burgers. I love burgers, but eating a whole burger at a restaurant leaves me feeling bloated and puffy. So, I’ve learned to make them at home, and make them a bit healthier by adding fresh spinach or Swiss chard. And still delicious by adding feta cheese!

And maybe some bacon.

The perfect burger, with more benefits! Once you cook kale into a dish, you can't taste it, but you're adding the highest concentration of good stuff per calorie possible. Add a mix of different meats to make the burger less fatty or more sustainable.

Ingredients
  

  • 1 lb. ground beef or mix in any amount of gorund turkey, pork, lamb, etc.
  • 1 bunch fresh spinach or Swiss chard
  • 1/2 cup feta cheese
  • Salt + Pepper
  • Worcestershire sauce

Instructions
 

  • Chop the spinach or Swiss chard and sautée over medium heat until slightly wilted. Set aside to cool while you place the meat in a large bowl and season with S+P and 1 or 2 teaspoons Worcestershire sauce. Add feta cheese and greens and mix well with your hands.
  • Divide into patties and grill to desired temperature. Top with anything you like, but here in California, we can’t skip the avocado.
