Summer on the Central Coast means grilling in your own backyard! If you’re keeping it healthy, here are 2 main dishes for the grill that keep it lighter. So invite some friends over, fire up the grill and chill some drinks…it’s going to be a great weekend!
First up, burgers. I love burgers, but eating a whole burger at a restaurant leaves me feeling bloated and puffy. So, I’ve learned to make them at home, and make them a bit healthier by adding fresh spinach or Swiss chard. And still delicious by adding feta cheese!
And maybe some bacon.

Yummy Kale Burger
Ingredients
- 1 lb. ground beef or mix in any amount of gorund turkey, pork, lamb, etc.
- 1 bunch fresh spinach or Swiss chard
- 1/2 cup feta cheese
- Salt + Pepper
- Worcestershire sauce
Instructions
- Chop the spinach or Swiss chard and sautée over medium heat until slightly wilted. Set aside to cool while you place the meat in a large bowl and season with S+P and 1 or 2 teaspoons Worcestershire sauce. Add feta cheese and greens and mix well with your hands.
- Divide into patties and grill to desired temperature. Top with anything you like, but here in California, we can’t skip the avocado.
